Using a cooling unit that utilizes a duct system allows the unit itself to be placed far away from your cellar yet still provide quality air conditioning. Since this type of system allows you to position your unit farther from your collection than other options, a ducted system is essentially the quietest unit and produces the least amount of vibrations that can potentially affect your collection. Why is Humidity Important? Humidity is a critical feature often overlooked in wine cellar design. 50% - 70% is recognized as adequate, with 60% the ideal. When the humidity is higher than 70%, it will likely cause mold and degradation of the labels and glue. When the humidity is below 50%, corks will begin to dry out resulting in loss of liquid in the bottles and possible degradation of the wine.
Avoid Home Refrigeration To Store Wine. A standard home refrigerator makes a poor wine cooling solution for several reasons. It is designed specifically to store and look after food products, not to store wines. An atmosphere that works well for meat and vegetables is far too cold and dry for your expensive wine. The preferred temperature for home refrigeration is somewhere between 35ºF and 38ºF (1.7 to 3.3ºC)
