Best location: Wine cannot thrive in just any underground location in your home, so before you settle on a definite location for your wine cellar, take the time to consider certain factors. As underground wine cellars are commonly constructed in the basement, for example, consider what your wine cellar would be sharing a space with. Placing your cellar in the vicinity of a laundry room, a boiler or air conditioning unit, for instance, will all have detrimental effects on your wine collection. This is because wine is sensitive to vibrations and odours. The vibrations alone, from having these appliances nearby, is enough to shake your wine racks and stir up sediments in the wine. Similarly, if any odours are present around your cellar, wine can absorb them through the cork, so be sure to consult a renovation builder when deciding on the best location for your wine cellar.
You may not be ready to construct an insulated room with a built-in air conditioner that will ensure perfect temperature regulation. The important thing is to keep temperature fluctuation to a minimum. In the summer, the temperature in your dining room may balloon to the mid-80s in the middle of the day then fall to the mid-60s during the night. Excessive temperature fluctuation will cause the wine to expand and contract in the bottle, which will draw in air through the cork and cause oxidation.
That being said, it is crucial that you measure your desired placement site for your new wine refrigerator before you begin any construction or make any large purchases. If you do plan on installing a wine refrigerator directly into your kitchen cabinetry, make absolutely sure that your cooler isn’t too tall, too wide, or too deep for your counter top. Choosing the wrong sized wine cooler can be a costly mistake that is difficult to fix.
The first principle for starting a wine cellar is to ensure temperature control. The perfect temperature for wine storage is a constant 55°F. Lower temperatures will throw the wine into a state of dormancy. For example, storing wine in the refrigerator at near-freezing temperatures will numb the wine, making it taste flat instead of fruity and lively. Higher temperatures will not only accelerate the wine’s aging, but when kept above 75°F the wine will slowly bake.
